peanut butter and banana baked oatmeal

When I was little I hated oatmeal. Unless we were talking instant flavored packets of maple and brown sugar. But then I grew up and something weird happened. I started to eat oatmeal all the time. Like every single morning.

This phenomenon occurred when I realized oatmeal made from scratch just needs a little TLC to compete with all the other breakfast foods.

Hannah oatmeal is textured and trashed up and suitable for every meal.

And once you make a perfectly flavored oatmeal recipe like the one below, you too will realize it’s your one true love in life and everything you ate before tasted like chemicals and had the consistency of glue.

  • 1 ripe banana
  • 1/3 cup milk of choice
  • 1 tablespoon peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup regular rolled oats
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt


Step 1

Preheat the oven to 350 degrees and spray a single-serving ramekin with non-stick spray.

Step 2

In a bowl, mash the banana and add milk, peanut butter and vanilla extract. In another bowl mix oats, cinnamon, baking powder and salt. Once combined, add to wet ingredients and stir.

Step 3

Pour mixture into prepared ramekin and bake for 20 minutes.
